Merry meet guys Well seen as Samhain is coming up I thought I'd share my recipe for pumpkin soup, its a lovely thick and warming soup excellent with a few crusty rolls. This recipe will serve 6 [glow=red,2,300] Equipment[/glow] Large saucepan with lid Sharp vegitable knife wooden spoon stick blender or food processor ladle [glow=red,2,300]Ingredients[/glow] 1 Medium Pumpkin 1 Medium White Onion 2 Medium Parsnips 2 Medium Potatos 1 Carrott 1 Clove of Garlic or teaspoon of Garlic Puree 1 ltr of Vegitable stock [glow=red,2,300]Method[/glow] Cut open the pumpkin and scrape out the seeds (see top tip) Carefully cut the flesh of the pumpkin away from the skin Peel and cube the carrot, onion, parsnips and potatos Crush the garlic if using cloves or the teaspoon of garlic puree Put the stock into the pan and turn on the heat add the ingredients when the stock is hot but not boiling cover the pan with the lid and leave on a slow to medium heat for one hour, stiring regularly and replacing the lid. when cooking time is over take your stick blender and blend the soup chunks or pour into a food processor and blend until smooth and creamy. serve with crusty bread and a nice pint of ale [glow=Green,2,300]TOP TIP [/glow] get the gunk off the seeds and dry on kitchen towel for a few days in a warm dry place, then you can plant them out for next years soup lol enjoy Blessed Be Danni)O(

Pumpkin seeds are rich in high grade essential fatty acids and trace elements. In particular Zinc which is benefitial for treating early stages of benign prostatic hypertrophy. They are also helpful in relieving menopausal symptoms.
