Rosehip Syrup is rich in vitamin C , easy to make, and children love it, ( So I'm told ).
What you need: 250g fresh rosehips ( in abundance now ). 500ml water. 125g sugar.
1). Crush rosehips slightly and place in a pan, add the water and simmer uncovered for twenty minutes.
2). Strain, then add the sugar to the liquor, stir and bring to the boil, then simmer for ten minutes.
3). Allow to cool and filter into small sterilized bottles.
Storage: Lasts one week in the refrigerator once opened. Unopened - Keeps for up to one year.
Use: 1. For children - 2 tsp per day. 2. Cordial - 1 part syrup to 5 parts water. 3. Use as syrup for pancakes, ice-cream etc.
